When my husband and I got married, his mother taught me a lot about baking, cooking and canning. Her recipes were the good old tried and true from throughout her life.
I was quite surprised when she gave me her favorite chocolate cake recipe which was exactly like my Wacky cake. The only difference was that hers was called 'Crazy' cake. Either way, it's a winner!
This easy cake recipe is just as delicious as it is simple to make. There are no eggs or milk in this concoction, which is why it is named 'wacky' or 'crazy'! It's a fool proof wacky cake recipe, indeed.
You will find this to be such an easy recipe that you won't believe what a super moist chocolate cake it produces. My family can tell a chocolate 'non' Wacky cake recipe a mile away. If it isn't a super moist chocolate cake, it isn't a Wacky cake.

Sift together dry ingredients; then add all other ingredients. Mix well on medium speed for 2 minutes. I use my kitchen aid stand mixer on speed #4. Stop to scrape sides of bowl a couple of times during mixing. Spray cake pan(s) with a baking spray like Pam for Baking, or you can do it the old fashioned way by greasing and flouring the bottom and sides of your pan. |

Bake on middle rack in a 350 degree oven for 30-35 minutes. I prefer using a convection oven for cakes, but this recipe will turn out in a conventional oven as well. Don't remove the cake until a wooden toothpick inserted in the center comes out clean. Cool on a wire rack before removing from pan(s). For Cupcakes: Fill paper cups 1/2 full and bake for about 20-25 minutes at 350 degrees. This Wacky cake recipe will make about 32 cupcakes. |
Before removing cake from a single layer pan, I first use a long serrated knife to cut off the rounded top of each one. The cake pan will guide the knife across if you rest it on the edge as you cut, which will result in perfectly leveled cakes. No more lop-sided layer cakes!
