This unique Poppy Seed Cake Recipe is a family favorite. One of our sons requests it almost every year on his birthday.

I've tried other poppy seed cake recipes and not one compares to this one in flavor and richness~it's super moist too!



Bundt Cake Recipes Use Fairly Basic Ingredients

Ingredients~

4 Eggs Separated
1 Cup Margarine (Sticks)
1-1/2 Cups Sugar
1 Cup Sour Cream
1 teaspoon Soda
3 Cups Flour
2 teaspoons Vanilla
1/4-1/3 Cups Poppy Seeds


Directions~

  • Beat egg whites until stiff - then set aside.
I use my Kitchen Aid Stand Mixer
with the whisk attachment on speed 8.

  • Cream margarine, sugar & yolks. In another bowl, mix sour cream & soda together with a spoon - let stand.
The soda will cause the sour cream to aerate a bit...
that's good and letting it set just makes it better.

  • Add the sour cream mixture alternately with the flour to the margarine mixture.
Use the regular Kitchen Aid mixing paddle now,
as you would for cookie dough, etc.


What I do is first add 1 Cup of flour to the margarine mixture,
while the soda/sour cream is still standing. Mix the flour
in well, then add 1/3 of the sour cream mixture
to the margarine/flour. Mix that well and then repeat with
another cup of the flour and another 1/3 cup of sour
cream mixture, and so on...

  • Stir in the vanilla & Poppy Seeds. Fold in the egg whites.
Here is another way the Kitchen Aid Stand Mixer makes
mixing so much easier. I use the 'stir' speed for
the vanilla and also for the first part of folding
the egg whites in. You don't want to let it 'stir' too long
while folding, just enough to get it started;
then finish by folding by hand.

  • Put batter into a greased Bundt Cake pan
Grease pan with a spray coating with the flour.
Pam for baking works great.


Make sure to spread the batter evenly around
the tube in the center of the pan.
This will ensure your poppy seed cake won't
contain any air bubbles.

  • Bake in a 350 degree oven for 1 hour. Invert poppy seed cake to cool.
I use my convection oven which automatically lowers
the temperature by 25 degrees. I still bake this cake for
an hour, even with convection, since the temperature is lower.
If you don't have a convection oven, just bake
at 350 degrees for one hour.


To cool my cake, I turn it upside down on the cake stand
it will be served on. Let the pan sit on the platter,
with the cake inside, until it is cool to the touch.
Then remove the cake pan and there it is~ready for glaze!

This is a heavy poppy seed cake, and very moist when you use margarine. I tried it once with real butter and it was too dry.

Of course, you need to mix up some glaze to drizzle over the top of the cake, so here is my recipe. It's not very scientific....one of those 'mix until it looks right' types, but you'll get the hang of it!



Easy Glaze Recipe For Bundt Cakes

Glaze Ingredients~

4 Cups Powdered Sugar
1 teaspoon Vanilla
1/2 to 3/4 Cups Milk

Directions~

  • Measure the powdered sugar in a mixing bowl. Add the smallest amount of milk (1/2 Cup) and the Vanilla.
  • Stir by hand with a large mixing spoon. When the mixture becomes to dry to stir to a smooth consistency, add a bit more milk. Stir again. Keep adding the milk until you have a glaze that is a bit thicker than pancake syrup.
  • Stir with the spoon until it is very smooth. Drizzle by big spoonfuls around the top of the cake. You want it to drip down inside the center and around the outside edge.
Once the glaze is on the cake, I like to let
it stand without a cover for about an hour, so the
glaze will harden some and stay in place.

When serving, I drizzle extra glaze over each piece as shown in the photo above.
